After searching and searching for a solution to fix our leaking potable water tap, we finally have it. We could not find any spare parts to fix this issue.
As a last resort we contacted Camec Technical support and they were very helpful. They explained that they have previously encountered this problem and the fix is the addition of a simple rubber washer.

Camec informed us that it is this red rubber washer on the end of the cartridge (The cartridge is - a ceramic valve that controls the on/off of the water flow). which normally leaks.
We need to simply add an additional washer to stop this leak.
The centre rubber washer pictured above is the recommended washer for the issue. It is about 1mm thick and is a flexible rubber. It is normally used in applications such as between a shower rose and the connection on the wall. They are fairly common.
We purchased the assorted pack pictured from Mitre Ten for $10. If you are lucky you may find it for around $1 separately. Either way this is a huge cost saver tip as a full tap replacement would be around $300.
